Rustic Summer Nectarine Sponge Tart

It feels like a while since I last shared some baking with you lot on here so I'm back with a lovely simple sponge tart. You might have noticed in my week in pictures post or Instagram I made this for dessert on Sunday when Scott came round for tea. It didn't take very long and could be made with any sort of summer/autumn fruit.


You will need:
90g of caster sugar
1 egg
40ml of groundnut oil (I used walnut oil)
55ml of whole milk
140g of plain flour
1 teaspoon of baking powder
a few drops of vanilla extract
4 large nectarines (I know there are six in the picture but two were left over...)
about a tablespoon of honey (to glaze)


Firstly I whisked together the sugar and egg together in a large bowl until it was thick and creamy. I then added the rest of my ingredients- the oil, milk, flour, baking powder and vanilla extract. Mixing again until well combined. 


I spread the batter mixture onto the base of a 20cm loose bottomed tin which I had greased with butter beforehand. I then stoned the nectarines and cut them into quarters- I finished off the cake by pushing them evenly into the batter. My nectarines were still very hard so I finished off the top with a sprinkle of sugar to keep them sweet. 

I then popped it into the oven at 180°C for 30 minutes. Leave it to cool for a few minutes before brushing with the honey to give it a shinny glaze.
