5 Simple Student Meal Ideas #3

This will be my final student meals post until later on in the year because on Friday I move out of student halls and go home for the summer. We now have a flat all sorted, signed the lease and are pinning like crazy. Our move in date is actually the 1st of July but I won't be there full time until term starts again in September. 


Fish Pie... Although it looks like every other pie I promise this one has fish in it. I bought a 'fish pie mix' from the coop and simple cooked the fish in half a pint of milk for about 10 minutes. Drain off the milk and use it to make a white sauce before adding the cooked fish back in. I divided it in two (putting one in the freezer) and topping the other with pastry and baking in the oven. 


Red Thai Curry... Loyd Grossman's red thai curry sauce was on offer in the supermarket and I fancied a change from my more indian ones. I simple added an onion. chicken and green pappers and it was delicious.



Tuna Fishcakes... Were made so simply on a night when I really couldn't be bothered. I cooked potatoes and mashed them, then added a tin of tuna, formed them into cake shapes and cooked in a frying pan for a few minutes to crisp them up. You could do this with any fish really but I just had tuna in the cupboard.


Toad in the Hole... A childhood classic made from a Jamie Oliver recipe just adapting it slightly to make it simpler. I've not quite perfected the light and crispy yorkshire pudding yet but I will eventually. I cheated and just made the gravy from gravy granules... I am a student after all.


Mexican Chicken... A favourite of Scott and Is this is made so easily with one of Maggi's So Juicy bags. They really are the perfect cheat food if you want to feel better than eating a ready meal. We either have them with mashed potatoes or rice depending on our mood. I've tried quite a few of them now but Mexican Chicken is my favourite!

  4. Mmmm this has made me hungry now! I love posts like this as I get bored of eating the same things at uni. I keep meaning to try making a pie with a lid like that - looks so yummy!! The tuna fish cakes are a great idea :)
