Poppy Seed and Orange Cakes

You may or may not know that I love a flick through the tesco magazine - especially when I come across something that looks delicious and can't wait to make. Unfortunately living where I do in Aberdeen I couldn't find any poppy seeds (not quite a lidl thing) so it took me weeks to track them down but eventually found them in my home town.

It feels like along time since these were all gone as I did mean to publish this recipe last week. Very tasty for just a few hours before class and my flatmates seemed to enjoy them too.



You will need:
125g of unsalted butter
80g of caster sugar
125g of self-raising flour
2 eggs
1 orange (zested & juiced)
1/2 tsp of baking powder
15g of poppy seeds



Beat the butter and sugar together until light and fluffy - I don't have an electric whisk at uni with me so I had to do it that hard way (tough work!). Add the orange zest, half the orange juice and continue beating. I found this mixture very hard to combine because of all the liquid however if you do your best it should all come together later.

Add the eggs one at a time and beat after each time. Sift in the flour, baking powder and a pinch of salt and fold it through with a large spoon then stir in the poppy seeds. It really is this easy! I must have beat mine quite a lot because they were beautifully light and fluffy.



Transfer the batter into cases (I used my silicon ones but whatever you have to hand will be great) and bake them in a preheated oven at 180°C for 15 minutes. If you stick a skewer into the middle and it doesn't come out clean they need a little longer.

I now urge you to go and look for a better icing recipe because obviously mine was WAY too runny... even after being in the fridge for 24 hours. I wanted to make it very orangey but added too much orange juice and then couldn't compensate with the sugar. Really I should be learning...
