Peach and Summer Berry Tart

I've been dying to make this tart since we first got the cookbook because it's on the cover I look at it every time and dream so when the fruit was in season a few weeks ago I thought I would give it ago. It is packed full of fruit! I would make this quick while they are still in season (just).


This recipe has two parts. Firstly you made the pastry for the tart then you make a small amount of spong mixture for the base. It would work with my fruit combination you fancy so just give it ago! Firstly put the flour, butter and sugar into the food processor- sometimes I make the pastry by hand and it can be done this way but sometimes you just feel lazy.

Blitz it until it forms breadcrumbs then add the egg and mix again to form a dough. It is that easy.


Use your spatula to take it out of the mixer and place on a clean floured surface where you can use your hands to bring it together into a ball.


The following part is equally as easy as the first and just as quick!



Put the butter and sugar into a medium sized mixing bowl and combine with electric beaters until well mixed. Mix in the egg and baking powder then gently fold in the flour by hand until evenly combined.


Roll out the pastry on a floured surface to fit your tart tin and then line the tart tin gently pressing into the corners and trimming the excess dough round the edges. If you find the dough to soft as I did try slicing it up with a sharp knife and then laying these disks of pastry into the tin. You should then be able to pat them together with the tips of your fingers. Made sure the base is even though because you don't want thicker bits of pastry. Then spread the dough even across the bottom. All you've left to do is fill the tart with fruit. Like I said you can use any fruits you want but I used:


200g of stoned peaches
a handful of blueberries
a handful of strawberries
a handful of raspberries



Sprinkle the top with a little sugar and put in an oven preheated at 160゜for 40 minutes. Should have take photos as soon as it came out of the oven to show it at its best but this photo was taken next day. My mouth is watering just thinking back on it. Enjoy!

  1. great recipe,i love the pics and easy to follow steps. I think i would be tempted to add a scoop of ice cream with it. it looks so yum!
