Festive Baking | Chocolate Candy Cane Cookies

When I was doing some research for festive baking I was looking for After Eight cookies when I realised candy canes would be the perfect treat for some cookies. These chocolate chip cookies have added peppermint extract and once they are cooled dipped in chocolate and decorated with candy cane pieces. 


You will need:

125g salted butter                            125g light brown soft sugar

100g caster sugar                             1 large egg

225g plain flour                               ½ tsp baking powder

2 drops peppermint extract             100g dark chocolate chips

100g dark chocolate                        3 peppermint candy canes (crushed)


Melt the butter before pouring into a big bowl, leaving to cool for a few minutes, then whisk in both types of sugar and the egg. Once well combined, mix in the flour and baking powder until it comes together as a dough. Add the peppermint extract, chocolate chips and mix until they are spread throughout. Wrap in clingfilm and put in the fridge for an hour. 


Divide the dough into 16 balls (I weighed mine so they were 50g each), put them on two baking trays lined with baking paper and press them down slightly. In total I baked mine for 14 minutes at 160°C (fan oven) then left them to cool completely on the tray. 


Once your cookies are cool melt the dark chocolate in a bowl over a pot of boiling water. Finally, decorate your cookies by dipping half in the chocolate, lay then on a baking tray and sprinkle with the crushed candy cane. I then let the chocolate set in the fridge for about half an hour.
