White Chocolate and Cranberry Cookies

Another piece of baking, you can tell I don't have much to do in the holidays. These are another one of my favorite cookies and I thought I would share them with you.


You Will Need:

100g white chocolate
125g unsalted butter
125 light brown sugar
1 free range egg
1 tsp vanilla extract
150g plain flour
1/2 tsp baking powder
50g dried cranberries


Mix the softened butter, egg, flour, sugar, vanilla, baking powder in a large bowl.


 I used an electric hand mixer and beat the mixture until it was completely combined. Remember to scrap the sides of the bowl to make sure your get all the flour.


Chop the bar of chocolate into pieces the size of your little finger nail and combine with the mixture. Combine the cranberries with the mixture too.


Use a tea spoon to measure out balls of the mixer and place them on a baking tray making sure they are well apart. Flatten them with the back of the spoon. This will make around 20 cookies.


Bake in an oven at 180゜for 15 minutes and then remove to cool. They will keep for about 4 days. Enjoy!
