Chorizo and Bean Stew

Maybe something a little different on the blog today- I am always typing up little baking posts but when I was making tea for my family the other week I thought about all the other main dishes I like doing. I saw this recipe in the Sainsbury's magazine and really wanted to try it because my family love tomato based dishes and when my mum was out I decided to try it and it turned out really well.

Ingredients:
½ x 225g spicy chorizo ring by Sainsbury's, sliced
1 red onion, chopped
2 garlic cloves, crushed
1 red chilli, deseeded and roughly chopped
15g pack thyme, leaves picked and roughly chopped
410g tin chickpeas by Sainsbury's, drained
420g tin mixed beans in mild chilli sauce by Sainsbury's
390g carton Italian chopped tomatoes by Sainsbury's
200ml chicken stock


Heat a large lidded pan and add the chorizo. Fry for 2-3 minutes, until just crisp. Remove the chorizo from the pan with a slotted spoon, leaving the oil.

Add the onion, garlic and chili to the oil and cook gently for 3-5 minutes.

Add the chopped thyme, the cooked chorizo, chickpeas and mixed beans to the pan (I didn't actually have mixed beans so I used a can of kidney beans, borlotti beans and chick peas) and cook for 2 minutes. Stir in the chopped tomatoes and stock, and simmer, covered, for 10 minutes. I maybe went a little over board with the tomatoes because I added one tin of chopped tomatoes and well as tomato passatat.

Lastly I cooked some cous cous to serve because my family like nice filling food but you could just as easily have it on rice or even better with baked potatoes. They are my favourite so I will defiantly be doing it again when we have some in the house. Happy eating.
