Chocolate and Marshmallow S'mores Cookies Recipe

This week at work we had a charity bake sale and of course I had to go above and beyond. I got really good feedback on my pumpkin spice cake but I also made these cookies. They are deliciously sweet and sticky. I knew when I saw s'mores cookies I had to give them a go because the flavours sounded so good as a cookie. 


You will need:

1 cup butter                               1 cup brown sugar

1/2 cup caster sugar                 2 large eggs

1 teaspoon vanilla                     2 1/2 cups plain flour

1 cup crushed digestives          2 teaspoons corn flour

1 teaspoons baking powder     1/2 teaspoon baking soda

1/2 teaspoon salt                      2 cups mini marshmallows

3/4 cup chocolate chips           1 milk chocolate bar


In one bowl add your dry ingredients - plain flour, finely crushed digestives, corn flour, baking powder, baking soda and salt then mix together.


In a larger bowl beat the butter, brown sugar and caster sugar until pale and well mixed. Add eggs and vanilla and continue mixing until smooth. Add half of the flour mixture to the wet mixture and beat together. Keep adding the flour mixture and beat until just combined.


Stir in mini marshmallows and chocolate chips. Then cover and put in refrigerator for 30 minutes. While you are waiting preheat the oven to 180ºC. 


I measured my dough balls so they were 50g each (but this isn't important ) then I put them on the baking paper lined tray. Bake for 10-12 minutes until cookies are golden brown on the bottom. The marshmallows will bubble away and go more like caramel on the outside. 


Once they were out of the oven I added a square of chocolate and some more marshmallows to the center. Careful to do this will they are still warm so they melt in a bit. Let them cool completely before enjoying.
